Super Yummy Muffin Cookies Recipe

Today I wanted to share with you my not-quite-famous-yet Super Yummy Muffin Cookies recipe. Healthy? Um….no, probably not. Nutritious? Sure…as long as you haven’t had your daily sugar allotment yet. Yummy? Of course!!!

Now it’s no secret that the kitchen and I do not see eye-to-eye most of the time. (With as much time as I spend in there, making meals, attempting recipes, and cleaning you would think that we would at least have an amicable relationship) I used to think I had a real penchant for baking cakes (boxed mixes, of course) but it turns out that the oven doesn’t seem to agree. Have you ever had to suck cake out of your oven with a vacuum cleaner? Oh, yeah…ummmm….me neither…

Regardless, I just can’t seem to stay away from baking, no matter how bad the desserts turn out (one year I baked all the desserts for Hubby’s work’s Christmas party…and I ruined *everything*. I had to “glue” the spice cake together with icing, and the over-floured cookies barely survived. Sadly, the eggless brownies didn’t.)

My latest creation evolved from seeing one too many “look-I-put-a-candy-bar-or-cookie-in-my-muffin” photos. I love sugar and have a fantastic sweet tooth. It usually kicks in after noon. This is fortunate, because I have the kitchen to myself when the kids are napping. And…as hubby’s discovered, I should *not* be left to my own devises. But lucky for you, this idea for my new muffin cookies recipe panned out!

You’re gonna need a pouch of sugar cookie or snicker doodle cookie mix (chocolate chip does not work well with this recipe for some reason-Hubby was devastated) and a pouch of muffin mix. This recipe should make 12 cookie muffins (or enough to feed three people). If you’d like more, double it 😉

First, preheat your oven to 400 degrees (you’re gonna act like you’re making the muffin mix). While this is preheating, mix the cookie mix and muffin mix in two separate bowls. Next, spray your muffin pan with nonstick spray (cupcake/muffin liners also don’t work well with this recipe).

There are three layers to the Muffin Cookies Recipe: cookie, muffin, then *more* cookie. Here’s how to achieve the correct balance:

  1. Place about a teaspoon or so of cookie mix on the bottom of each muffin holder. You may need to use your fingers to spread it around so that it covers the whole bottom.
  2. Using a tablespoon, distribute the muffin mix evenly amongst the muffin holders.
  3. Place a dollop (about a tablespoon) of cookie mix on top of each muffin.

Bake the mixture at 400 degrees for about 20 minutes or so (you wanna follow the baking directions on the muffin mix pouch).

Pull from oven, let cool and enjoy!!!
