One day, pretty far into what I would consider my ‘adult life’, I realized, “Whatever happened to the Peanut Butter Pie?!” I grew up in the South where this is a common place dessert, but I had later moved up North where seemingly it was nowhere to be found so thus I had completely forgotten about it. I needed to address this serious issue promptly. First, this might be my very favorite pie. Ever. It’s cool, it’s creamy, and there’s no baking which is a prerequisite for good summertime desserts, am I right?! Oh, and it’s ridiculously easy to make, I promise, no sweating.
Ok so I cheated a little and I do use a premade pie crust…
1 store bought pie crust of the cookie or graham cracker variety (I LOVE oreo)
1 – 8oz block of cream cheese, softened
1 cup of sugar
1 tsp vanilla
1 cup creamy peanut butter
1 Tb softened butter
1 cup heavy cream
Beat together cream cheese, butter, peanut butter, sugar, and vanilla until smooth.
Whip the heavy cream until thick and creamy and fold delicately into the peanut butter mixture.
Spread this mixture into prepare pie crust.
Refrigerate for several hours for light and fluffy or Freeze for a couple hours for thick & creamy.
