With Spring approaching, I know many of you will have your herb gardens well underway, and I have a great recipe for just that: Pesto! Pesto is a commonly forgotten sauce that is really much easier to make than most might think. It is a very versatile sauce which can be made with a very wide variety of ingredients and in very little time. Basil is usually the main ingredient in pesto, but I have seen it made in a number of different ways with cilantro, arugula, kale and others. I want to share with you my version: Basil Pesto, which is quick to make, fresh, and packed full of good for you ingredients.

Bird’s Basil Pesto
2 heaping cups Basil Leaves (minus stems)
1/3 cup olive oil
1/2 cup toasted pine nuts (walnuts are really good too!)
2 tsp minced garlic
1/2 cup shredded parmesan plus additional for garnish
3 Tb. softened butter
Cooked Pasta of choice with a few tablespoons of reserved cooking water
Salt to taste
In a pan over low heat toast pine nuts and set aside.
In Food Processor place cooled pine nuts, basil, oil, and garlic, blend until all items are finely chopped and well combined. Add parmesan and butter and pulse a few times until these are mixed with the other ingredients.
DONE …. can you believe how easy that was ?!
Pour this onto hot cooked pasta and add some of the cooking water, stirring until sauce forms and coats the pasta. Enjoy!
