GFCF Chocolate Granola, it needed to be done
So I asked myself one day, “Why don’t I make granola, ever?” I’ve never really tried, everyone boasts about it being easy and all that. So I went trolling around the internet reading, taking notes to develop my own granola with all the good stuff in it that I like with none of the craziness. So I made this concoction, and it was yummy and easy too! But then I thought…CHOCOLATE. This mix definitely needed chocolate to be complete, hey nobody said this was gonna be a health nut granola with sticks and twigs. So then I thought well instead of whole chips, I’ll stir in chips while it’s cooling and make it all melt-y and chocolate-y..yessss. So thus here it is, feel free to enjoy however you like: by itself, on yogurt, in milk, whatevah. Xoxo, Bird
Bird’s GFCF Chocolate Granola
1 ½ cups Old Fashioned/Rolled Oats GF (I used Bob’s Red Mill)
½ cup sliced almonds
½ cup mixed nuts
3 Tb brown sugar
¼ cup Maple syrup
2 Tb oil
½ tsp salt (optional)
1/3 cup raisins
¼ cup other dried fruits (I used cherries & apricots, but go all raisin if you like)
½ cup GFCF chocolate chips
Preheat oven to 300 degrees
In large bowl combine oats, nuts, and fruit
In medium bowl combine syrup, sugar, oil, & salt then pour over oat/nut mixture and stir until well combined
Pour onto a lightly greased 9×13 cookie sheet and spread thin so everything is baked evenly.
Bake for 1 hr stirring ever 20 minutes.
Turn heat up to 350 for 15 min more.
Pull out of oven and let cool for a few minutes then pour into a bowl while still quite warm and stir in chocolate chips to melt evenly all over granola.
Try not to burn your mouth while shoveling the granola in it while it’s too warm.

I cleaned out my freezer the other day and discovered 5 bags of gf chocolate chips…well guess where I plan to use one bag! Thanks for this I LOVE a good home made granola and this is sure to be a hit…if the rest of my family gets a chance to try it before I hide it.
LOL. You could always give them a little taste and then tell them there’s nothing left! LOL.
