Searching for a sweet, I found the Kinnikinnick Gluten Free White Cake Mix in the pantry. The pre-made cake mix can likely be found at your local King Soopers (Grocery), Sprouts, Whole Foods or Sunflower Market. You can also obtain it online here.
Your part…add:
4 eggs (egg free substitute is ¼ cu applesauce for every egg = 1 cu applesauce)
¾ cu oil
¾ cu cold water
Whisk for 2 minutes.
Slowly add 1 package of cake mix
Stir just until combined
Pour into greased 8” cake pan
Bake 25-30 minutes at 350º
My Take:
I really liked it. When I took it out of the oven (a photo I forgot to take), it was smooth, only showing the lines I made in the top as my “smoothing lines”. For me, most cakes I make (non-gf included) the center sinks just a little. To have made a cake that didn’t is a feat for a non-cooker such as I.
However, with most GF bread(-ish) items, it was super moist. I left it uncovered for a bit to let it dry out some and it worked like a charm. My neighbors who are not GFCF raved.
